Where can I download FHIR data?
Each resource type in FHIR Core includes examples.
If you want real patient data, as that is health data there are all sorts of rules about seeing it.
If you want large volumes of fake FHIR data, you might check out Synthea. As Richard says, you won’t typically be able to access real data unless you’re working on behalf of a specific healthcare organization that gives you the rights to use it - for their purposes.

It’s possible to customize Synthea. They’re pretty good about providing support if you can’t find what you need in their documentation.
