dateTime or period are appropriate for over 90% of your use cases. instant overlaps with dateTime and is only there for convenience. Timing is for more complex scenarios where a observation may reported using fuzzy times relative to a life event perhaps, like “after breakfast” or “before bedtime”. For example a patient may be self reporting something like an episode or food or a heart rate. Timing can also be use to report disjointed periods like 8-9AM and 1-2PM or a sequence of times. For example recording a clinical sign or symptom.
